These are the best limas I have ever tasted! These recipes will work with any legume, but you should try these. You will be disappointed with all the rest once you have tried these.

I am an old Southern girl, so these are great with a little chopped ham (or cooked bacon, ham hocks etc.) and onion. Soak beans overnight. Drain. Then, cover with fresh water, a pinch of salt to taste, tbsp dried onion flakes, 2 tbsp olive oil. Bring to a boil, then cook on low until tender for about 2 hours. Add hot water as water cooks off. I like them soupy with a dollop of sour cream and a piece of buttermilk cornbread.

For Vegetarians, Soak 1 1b of beans overnight. Pour off water. Cover beans with fresh water. Add two tbsp of olive oil, a couple of cloves of crushed garlic, some onion to taste, fresh or dried, bring to boil then cover and stew on low heat for 2 hours until tender. Add hot water as it cooks down. Pinch of Salt to taste. Serve over short grained brown rice with chopped green onions and a dollop of sour cream (unless vegan), Delish! Good Eating!

Never tried these before but intrigued by the color. Put them in the slow cooker (after soaking overnight) for about 12 hours on low. Very hearty, great on salads, or just to eat. They are very large beans and keep their color even after cooking. Good service from Barry Farm. Will order more from them in the future.

I prefer the Westbrae chili bean mix to their salad bean mix for bean salads. Salad mix has garbanzos which are not my favorite - just don't have much flavor. Rinse these guys, and add tomato, plenty of fresh rosemary, small cubes of smoked mozzarella and olive oil and a little balsamic and let sit for a while. Add whatever else - chilled small pasta, bacon, mushrooms, peppers, asparagus, shrimp... Super tasty.

 I buy organic cranberry beans in 25-50 lb lots. They are a staple in our household. I had hoped to buy some from Barry Farm, and assumed - from their name - that they grew them. After all, they are a "farm," right? Understanding that some "organic" beans come from China, I thought I would call Barry Farms to confirm the country of origin for their beans. The female who took my call told me that they don't know where these beans come from since they get them from a distributor (so much for the "farm" in "Barry Farms"). I asked if she could give me the contact information for the distributor so that I could ask them directly. Her answer: "no". I asked if THEY could find out from the distributor where these beans come from. Her answer: "no". Thanks, but I'll do my business elsewhere.
